Pasta with sausage and spinach. Very easy. Chop an onion and sautee it in some oil. Cut some fennel sausage (or sweet italian) into 1/2" slices and throw them in with the onions (I cut them so small so that when they cook, they make little meatballs almost). After they're brown, throw in a clove or two of garlic, minced. After a few minutes, two quarts of chicken stock (PLEASE make some homemade stock and use it - you don't know what you're missing). after that boils, toss in some pasta (I use fettucinni). When the pasta is cooked and all the juice is soaked up, add a cup of heavy cream, then add a bag of washed spinach. After stirring for a minute or two, serve. It's fantastic.
