I guess I didn't answer the question of the 'go to' recipe.
Sonrisa found a recipe that is low fat for Stuffed Peppers.
A lb of cooked ground turkey (you can add some dice onion if you want)
A cup or 2 of cooked brown rice
A clove or 2 of minced garlic
A can of diced tomatoes - fire roasted is good or the ones w/ balsamic vinegar isn't bad.
Fill the hollowed out and clean peppers (about 4) and put some mozzarella on top. Bake it in the oven. Depending on how cooked you like your peppers, the time will vary. I usually nuke the peppers if I'm in a hurry on high for 3 minutes and then bake long enough to melt the cheese on top.
