If that person is your friend you should find a restaurant that serves a vegan friendly item. You can always go to the "cool sounding place" on a night when her friends are coming along.
Seriously...how hard is it for a restaurant to put one vegan/vegetarian item on a menu? Most decent chefs do this for the very sake/situation you are talking about. It sounds like the restaurant wanted to go to is run by someone with poor business savvy.
Making sure your friends are happy is more important than the selfish need to visit the latest trendy place IMO.
