I have a few I really enjoy:
Scariest:
Halloween (the original, not the crappy Rob Zombie one)
The Exorcist (and I will watch it again, many times. Excellent movie)
The Shining (Stanley Kubrick = The Man)
Non-Horror movies I find scary:
Deliverance (come on, you know that scene is terrifying. GREAT movie though)
M (It's from 1931, and about a child murderer. Sends a chill down my spine)
The Silence of the Lambs (one of the best movies ever)

People always say that to me too, but when you grow up about 1/2 a mile from an abandoned farmhouse (that was abandoned, partially burned, partied out by burnouts in the 70s/80s, and God knows what else) that literally looks exactly like the picture you see above, and you can remember being with your friends daring each other to go in the basement when it was dark out, and always chickening out, it really makes the movie go to a whole new level.
I can see why a lot of people would think it is stupid, but for someone who is always more creeped out by what is in their head (in this case, an implied...something off camera) rather than what is on screen (I do video production for a living, so a lot of times when stuff is happening I'm just analyzing it trying to figure out how the effect was done), and having an intimate experience with a place that looks almost identical to what you are seeing on screen...it really makes for a uniquely creepy experience.

...just creeped the hell outta me. The whole invasion scene is just really, really disturbing. Just sit in a room, the dark, with your sound cranked all the way up, and watch it alone. See how well you sleep that night.

Apparenly I did see Carpenter's remake. Although I still think that this movie could be done much better today. Definitely one of my fovorite old horror movies.

Scariest - The Exorcist
Nastiest - I Spit On Your Grave
The two movies that scared me the most as a kid were Horror of Dracula (1958), Christopher Lee's debut as The Count, and The Haunting (1963) starring Julie Harris. (remade not to long ago) The original is tame by today's standards, but quite the psychological thriller for me seeing it as a 12 year old in a very dark movie theater.

I thought that movie was garbage. It had no real point, except to see people getting tortured and such. I also hated Hostel for the same reason. No artistic value, just trying to gross people out. I know it's a "true" story, but done in a way that isn't scary, it's just gross. The acting sucked too...and that had the worst killer in the history of horror films. I like horror movies with some point to them, and some creativity.

The Prince of Darkness freaked me out as a youngster.
The most shocked I have ever been in a movie was the turning point of Dusk til Dawn. What the hell was up with that. The movie went from an interesting drama to a bizarre horror flick. It was as if Tarantino woke up with a bad hangover one morning shoot and said "That's it! It's not working....I'm re-writting the script. Call in that crazy Hayak chick and order me up a snake."
