so simple, even I can't mess it up:
pan fry some ground beef, bell peppers and onions.
Mix the beef/veggies together with a can of condensed tomato soup, chilli powder, and pasta of your choice (I usually go with elbow... that's not my picture above).
I alternate between this dish, Spaghetti and Mac 'n Cheese most weekdays.
EDIT: I should note that I basically need to fortify my diet with a vitamin a day since all I ever eat are calories.

Pasta with sausage and spinach. Very easy. Chop an onion and sautee it in some oil. Cut some fennel sausage (or sweet italian) into 1/2" slices and throw them in with the onions (I cut them so small so that when they cook, they make little meatballs almost). After they're brown, throw in a clove or two of garlic, minced. After a few minutes, two quarts of chicken stock (PLEASE make some homemade stock and use it - you don't know what you're missing). after that boils, toss in some pasta (I use fettucinni). When the pasta is cooked and all the juice is soaked up, add a cup of heavy cream, then add a bag of washed spinach. After stirring for a minute or two, serve. It's fantastic.

I've made that before but I add a dash of red pepper flake to it and add some shredded parm on top.

I guess I didn't answer the question of the 'go to' recipe.
Sonrisa found a recipe that is low fat for Stuffed Peppers.
A lb of cooked ground turkey (you can add some dice onion if you want)
A cup or 2 of cooked brown rice
A clove or 2 of minced garlic
A can of diced tomatoes - fire roasted is good or the ones w/ balsamic vinegar isn't bad.
Fill the hollowed out and clean peppers (about 4) and put some mozzarella on top. Bake it in the oven. Depending on how cooked you like your peppers, the time will vary. I usually nuke the peppers if I'm in a hurry on high for 3 minutes and then bake long enough to melt the cheese on top.

An almost homemade Italian.
1 lb of Italian sausage ground or link If using links cut into 1/2" pieces after cooking if ground just brown and drain.
12 oz raw mushroom clean and cut into quarters
12 oz rigatoni or penne medium size
1 jar or marinara sauce of your choice
8-12 oz of shredded mozzarella
Boil the pasta and put into a casserole dish greased with olive oil add mushrooms, pasta, sausage and 3/4 of the sauce. Mix add remaining sauce to top
cover with mozzarella and put in 325 degree oven for 25-30 minutes.n

Bacon stuffed jalapenos:
Cut the tops off and scoop out 12 jalapenos.
Mix up 2 oz softened cream cheese, 1/2 cup shredded sharp cheddar, and 1/4 cup of shredded monterey jack. Also, fry up 4 slices of bacon, crumble, and mix that in too.
Stuff the peppers with the filling, and wrap those bad boys in bacon (cover the filling with the bacon to prevent seepage). Grill or bake at 350 for about 45 minutes or until the bacon is crispy.
As long as you're wrapping things in bacon, wrap some dates too, you know you want to.
