Okay, if you want a real answer to why it I like it, I think sushi messes with textures, flavors and concept. The presentation is always gorgeous, which I appreciate, and you can get a wide variety of tastes that you were not expecting.

For example, one roll from my local sushi hangout took avocados and whipped them up like butter to put on top of an eel roll. The result was a light, but powerful taste that I wasn't expecting. They have another roll with a small slice of lemon, which was completely refreshing and also unexpected. From Omi (in East Lansing) I love the Red Dragon roll because of its use of spicy mustard, and their crunch munch roll because of what they put inside their crab salad (I don't know the term for it). The effect is a soft texture on the outside, but a crunchy texture within. Plus, it tastes fantastic.

I love all kinds of food, but sushi is awesome when its done well. I always order unique rolls from the restaurant to see what is out there. I say try some specialty rolls. If you are still not into it, no big deal. It's not for everyone.

Sashimi.

Because when you have amazing sushi...it's one of the freshest foods on earth. Imagine, a fish so incredibly fresh and of such high grade quality that it is caught on a single line, speared through the brain, thrown immediately on ice, and the auctioned off. Fish that melts in your mouth.

Tuna
Squid
Yellowtail
Salmon
Scallop

After a fine sashimi meal...I get an euphoric feeling like no other meal. Pure high grade protein and delicious healthy fat.

This. Clams are great also.

I go to Noble Fish :: Japanese Grocery Store, Sushi, Noodles, Fish, Sake in Clawson maybe once a month to get sushi grade seafood to take home. They have everything you need to make your own sashimi & sushi and their pre-made sushi is excellent too. If that place was closer to my house I'd go more often.

Its cuz the Hipsters think they are sophisticated and cool if they are into the sushi scene. A prime example is Jeremy Piven allegedly getting mercury poisoning from eating sushi 3-5 times per day. If you have ever been to RA Sushi Bar (chain), you know what I mean.

Or maybe some people just like it? Call me crazy, but I'd rather eat seafood, including sushi, over steak on most occasions. And I'm too old and lame to be a hipster!

Believe it or not, some people like seafood. I like a nice steak as much as anyone else, and if given the choice between a Peter Luger steak and an equivalent sushi place, I'd probably choose Peter Luger's most times. But I wouldn't want steak everyday, just like I wouldn't want any food everyday.

The taste and texture of a piece of fresh sushi, with some wasabi and soy sauce on it is pretty awesome.

And to answer your initial question. Good sushi isn't slimy, has a firm texture when you bite into it, and tastes good. Bad sushi is oily/slimy, kind of has a jello like quality when you bite it, and tastes like the smell you'd experience if you walked into an entire store room of unrefrigerated week old fish

Sake, Hamachi and white Tuna that melt in your mouth can't be beat

except by fatty tuna - that's the true delicacy. more expensive but worth it

when I moved to cali I was scared of sushi, the first thing I tried was unagi - it's eel but it's barbecued so at least it's cooked

also, I prefer california rolls with the mushed up crab meat vs. the crab chunks - anyone else have an opinion on that

For the most part, when you eat sushi or sashimi it is not fresh. FDA requires most fish to be frozen before it is sold for sushi or sashimi use. That is one reason why, in my opinion, the sushi in Japan is so much better than it is here.
