Depends on the rice; I've had dry rice that was absolutely terrible. Overall, I have no idea but I know good sushi and bad sushi when I taste it. Sorry that's not too helpful.

Let me say that I eat a LOT of sushi... I love it. One of the top 5 sushi places I have ever eaten at is in East Lansing. AI Fusion Sushi is awesome...
I prefer tuna and salmon, and their rolls there are awesome and creative (at least in names).
I would recommend the "eating nemo roll, the M.S.U. Roll, and the Surf and Turf roll. A large blend of traditional sushi and new creative "americanized" rolls....

If you are asking for what to try, I would say go with a "specialty" roll. These are more expensive rolls, but are usually more flavorful. My friend tried to get me into sushi with a spicy tuna roll, but it just tasted really strange for the first time eating sushi. I think the easiest way to get into sushi is going for the more flavorful rolls.
Now if you are looking for a good place to try in the East Lansing area, I would suggest Omi or Sushi-Ya. I haven't been to Sushi-Ya yet, but I have only heard good things. As for Omi, I love their Red Dragon roll and their Crunch Munch roll.

For the raw stuff (specifically tuna) it should have a good texture, be pretty firm and not very fishy.
For the cooked stuff, just whatever you think tastes good.
And as for the "I'd rather have a steak" comment, that's totally valid. I don't really want steak and potatoes every day, though. Variety tends to be pretty good....

It's more digestable. I love steak and I love sushi. Sometimes I want one, sometimes I want the other. I'm just glad I'm not a vegan, because I can have both.

Agreed. If you want to ease into it, most places have a "Dragon" roll, or something similar, which is mostly shrimp tempura. Once I tried the raw stuff, I got pretty addicted though.

Fresh sushi is good for you, healthy, non fatting, nutritious, and tasty. Personally, I prefer sashimi with the rice on the side. For many people, it is an acquired taste, sorta like the first time you tried beer or bourbon.
